RECIPE – Rice Pudding

This Month’s Now Featuring Artist Joanne Abraham sent me this lovely Rice Pudding recipe!

2 cans coconut milk
2 cups water
1 cup of rice
1/4 cup sugar or Agave syrup
raisins
cinnamon
vanilla

boil the rice in the water and coconut milk. after it boils, let it simmer until the milk gets thicker and until the rice is nice and soft. I think I let it simmer for a good 35-45 minutes. I also stuck a cinnamon stick in with while it boiled, but you can just add cinnamon later, too.  the recipe called for vanilla too….I had none, but I had a bit of butterscotch pudding mix, so I put a bit in. I added the raisins in the last 10 minutes of cooking or so…you can add them at the very end if you don’t like them mushy. I like them swollen like ticks…!….so I let them stay in long enough to soak up liquid.

then I let it stand in the fridge for a while..I had some while it was hot, and it was okay…but it was way better a few hours later. Cold rice pudding is so much better.
