RECIPE – Veggie Chili

Hi friends!  It is the new year and that means getting healthy for alot of us!  We have upped our veggie intake at the Adolphe house, here is a great recipe!

1 Butternut Squash peeled and chopped
1 Onion chopped
1 Red Bell Pepper chopped
1 can Diced Tomatoes
1 can Black Beans
1 can Mixed Beans
1 tbsp Turmeric
1 tbsp Cumin
1-2Tbsp Chili Powder
2 whole Cloves Garlic
1-2 cups Water

Cook onions and peppers until onions are translucent in a little bit of olive oil, add spices, garlic, butternut squash and can of tomatoes and cook for 30 min.  Add water as you like, for the thickness you like.  Add beans and cook for another 30 min or so.  Serve with toast and a little hot sauce!
